Cream of Broccoli soup

I meant to post this recipe several days ago, on St Patty's Day actually. It was kinda funny. For breakfast I had my usual green smoothie (made with a spinach base and just rocks! SO healthy for you and incredibly tasty). Then for lunch, I had some leftover cream of broccoli soup I had made and just laughed how all my meals were "green". So not intentional! Of course for dinner we had the typical St Patty's meal of corned beef at cabbage at my parents house.

This soup is one my kids all give a thumbs up approval for. It's super easy to make and doesn't take long at all. I've made some changes to the original recipe cuz that's how I roll!

Cream of Broccoli Soup
3-4c chopped broccoli
1c chopped mushrooms
2 cloves of garlic, minced.
4c chicken broth (or base)
4 Tbsp butter
4 Tbsp flour
1/4 tsp pepper
1/2 tsp salt
16oz sour cream (i've also used light cream in place of this)

Saute broccoli, garlic & mushrooms in 2 Tbsp butter. Add 3 1/2 c of broth. In a skillet, melt 2Tbsp butter, add flour, salt & pepper and 1/2c chicken broth till thick. Then stir in sour cream. Add to the rest of the mix and heat.

  1. Jenn, this sounds divine! I have a lovely Cream of Broccoli soup recipe that a friend gave me like 20 years ago...and it's FULL of velveeta cheese and flour...milk. It's totally delicious...but not healthy with the processed cheese used in it. I'm definitely going to try this one - a much healthier alternative and my Beloved and I both are mushroom fans. Thanks! :) I've become a follower of yours...I hear your heartbeat for life...and your Noah. I'd like to journey with you and encourage you. I don't get to blog that often; I have a couple blogs myself. But I'll definitely do my best to drop in from time to time to see how you're doing and to drop you a line. Hugs...and PRAYERS ABUNDANTLY as Jesus continues to lead you through this journey of motherhood...and life. It's only because of his Amazing Grace that any of us can cope with our shattered dreams of the way things might've been. May HE continue to be the air you breathe as HE helps you continue to put one foot in front of the other in the path HE has lighted for you...

I enjoy hearing from each & every one of you! Thanks for taking the time to comment. :)
