This is an easy dessert to make. Use a package of sugar cookie dough from the store, roll it out into whatever shape you want and bake it. In the above photo I wanted a flag but typically I have used a pizza pan and made it round. Then mix up an icing using 8oz of cream cheese, about 2 cups of powdered sugar (to taste) & vanilla. Fold in 1 small tub of cool whip. Finally, top with whatever fruit you like. I typically use kiwi, mandarin oranges, strawberries & blueberries but since my daughter requested a flag design for her birthday, what you see above is how we made it. I had the extra fruit in a dish for others to put on more after the pizza was cut. This is such a refreshing summer dessert!
