"K" is for "Korean Egg Drop Soup"

I had forgotten about this soup until I whipped it up just the other day. It comes together SO easy with some leftover chicken or turkey! In fact, I make my own bone broth and freeze containers of it so that made this an even healthier option. Add in some canned or frozen peas, some scallions from the garden and BAM! A healthy, filling soup full of flavor yet low on calories. It's weight watcher & Trim Healthy Mama friendly!

Egg Drop Soup

4 cups chicken stock
1 tsp soy sauce or Braggs Aminos
1 cup cooked chicken or turkey chopped
1/2- 1 cup baby peas
1-2 eggs lightly beaten
scallions chopped

In a saucepan, bring stock & soy sauce to a boil. Add chicken, peas & green onion. Return to boil.  Slowly drizzle in beaten eggs around the pan and allow to set (about a minute). Remove from heat. Garnish with extra scallions if desired. (want it spicy, add some red pepper flakes).
