Homemade Caramel Popcorn


Today's recipe is one I make only for when we go camping. Because let's face it, this isn't exactly one of my healthier recipes. It also makes SO much so it's perfect to take camping to share with all the other families we usually go with. It's become a tradition now that we can't go camping without this tasty treat!

Caramel Popcorn
1 cup butter
2 cups brown sugar
1/2 cup corn syrup
1 tsp salt
1/2 tsp baking soda
1 tsp vanilla extract
5 qts of popped popcorn (or 3 full size bags of microwave popcorn)


Preheat oven to 250 degrees F (95 degrees C).

In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla.


I put my popcorn into a brown paper grocery bag. Why? Because clean up is a breeze, just throw the bag away! Pour the sauce in a thin stream over popcorn, stirring to coat.



Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.
